1. Irish Dulse (palmaria palmata)
Dulse’s properties are similar to those of a flavour-enhancer. It is commonly referred to as dillisk on the west coast of Ireland. Dillisk is usually dried and sold as a snack food from stalls in seaside towns by periwinkle-sellers.
Cooking:
Dulse flakes can be used in soups, chowders, sandwiches, eggs and salads, or added to bread/pizza dough, delicious for baking. Finely diced, it can be used as a flavour enhancer in meat dishes, such as chili, in place of monosodium glutamate or use as a salt replacement.
Dulse has a salty smoky nutty taste.
Dulse contains iodine, which prevents goitre, high in zinc B6 and B12

2. Sweet Kelp (saccharina lattisima) 40g
When dry the colour will be a dark yellowish brown. The Sweet Kelp contains a natural sugar content which can be seen on the surface of the plant.
Cooking
Sweet Kelp flakes can be sprinkled in soups, chowders, sandwiches, eggs and salads, or added to bread/pizza dough.

3. Sea Spaghetti (himanthalia elongata) 40grams
Sea Spaghetti sometimes called Chorda Filum.
Cooking:
Sea Spaghetti can be sprinkled in soups, chowders, sandwiches, eggs, pasta and salads, or added to bread/pizza dough, adds a nutty flavour.
Use only 1/2 table spoon pps
4. Bladder Wrack (fucus vesiculosus) 40 grams
Bladder Wrack or Vucus Vesiculosus has been popular as a way to keep the metabolism in balance and to help goitre. It is used as a therapeutic tea or base flavouring for soups, stews, stocks and tinctures.
The main use of the herb has been for the stimulation of the thyroid gland as a treatment for obesity and cellulite.

5. Kelp Kombu (laminaria Digitata) 40 grams
This seaweed will have the most iodine compared to the other seaweed vegetables, its flavour is known as the fifth taste(umami)
Cooking:
Can be cooked as a sea vegetable or used for baking, It is used in Japan and China for making dashi, a soup stock.

8. Smoked Dulse Powder 25 g
Smoked at low temperatures to preserve enzymes and nutrients in the Dulse.
The Irish dulse is smoked using oak, beech and fruit woods to give it a subtle natural smoky umami flavour.
